Notes:
(FF) ~ Dish is or can be modified for the FODMAP diet. Please select FODMAP option in the Notes section.  Many recipes can be modified for FODMAP.  At a minimum, onion and garlic will be replaced with asafetida-especially in those dishes using garlic or onion in the name.  Dairy substitutes will be used and gluten omitted.  If you have any questions about the ingredients, please ask and we can work together to ensure the right items are used.
(GG/BR) ~ Prep for the grill or broiler
(SC) ~ Can be prepped for slow cooker-just ask!
(LS) ~ Contains less than 135mg sodium per serving
(RS) ~ Reduced sodium; less than 500mg per serving
(PtY) ~ Available as a patty

Weekly Menu

Here's the weekly standard menu as we get started up again.  I'll switch a few items out each week, but I'm keeping it pretty short and tight until the grocery stores are more dependable in their offerings. 


Also, the Secret Menu will be offline during this time as well.

Chicken with Red Pepper Sauce (FF) | Chicken or white fish finished with a velvety roasted red pepper sauce

Salmon (FF/LS) | roasted, with brown-butter tomato relish.  FODMAP replaces with margarine.

Cottage Pie (FF) | Seasoned beef with vegetables, topped with garlic mashed potatoes.  Garlic omitted for FODMAP. 

Herb Roasted Chicken (FF) | half chicken; breast + leg-thigh

Chili

  • Red (FF) | Beef or Turkey, red beans, tomatoes, red chilies.  FODMAP omits beans.
  • White (FF) Turkey, white beans, and green chilies.  FODMAP omits beans.
  • Add Fritos to any chili


Pasta

  • Choose sauce.  FODMAP versions available.
    • Quick Beef Bolognese
    • Puttanesca with Italian Sausage
  • Choose noodle.  FODMAP versions available
    • Spaghetti
    • Penne
    • Whole wheat


Sides

  • Mac & Cheese (FF) | FODMAP version made with non-dairy sauce base (CHICKEN STOCK) and parmesan cheese with GF noodles
  • Rice (FF) | white, brown-wild mix.  Add mixed veggies!
  • Seasoned Green Beans (FF) | simply seasoned and steamed
  • Corn O’Brien (FF) | red and green peppers, bacon
  • Seasoned Zucchini (FF) | simply seasoned zuke & yellow squash mix
  • Roasted Potatoes (FF) | with lemon or dill
  • Mashed Carrots & Potatoes (FF) | with a touch of milk and butter
  • Chickpeas & Greens
  • Caesar Salad (FF)
